Garden to Table Pizza
Sunday night Chef Chris made homemade personal pizza for our family.
This is Dr. Adame’s pizza, made with lots of veggies from our garden and served with local blackberries.
Our garden veggies include the zucchini, kale, tomatoes, jalapeno pepper, basil, and chives.
The “sauce” is a hummus-pesto hybrid!
Kale-Chickpea Hummus-Pesto
Approx 1-2 cups kale, packed
1 Medium zucchini, chopped
1 Small onion, chopped (can substitute green or purple onions)
Zest and juice of one lime
1/2 can chickpeas, drained
Cumin seeds, whole (about 1/2 - 1 tablespoon)
Lots of peeled garlic cloves
Salt and pepper to taste
Bunch of fresh chives
1/2 cup nutritional yeast
Handful of peanuts (omit if allergic)
Directions: Place all ingredients in a food processor and blend till smooth

Basil
Zucchini
Juliet Tomatoes
Slices of Jalapeno
The tofu is extra firm tofu (not from our garden), coated in sage salt from local Shining Waters farm ad olive oil, and baked at 415 degrees for about 18 minutes.
