Garden to Table Open Faced Sandwich
This is one of Dr. Adame’s favorite and standard summer meals, made with lots of veggies from our garden and served with local blueberries from Hole In the Woods Farm and baked tofu (we keep this in the fridge to add to meals through the week). Easy to quickly heat on a cast iron skillet.
The bread is Dr. Adame’s homemade sourdough!
Our garden veggies include the zucchini, kale (for the pesto), tomatoes, jalapeno pepper, basil (for the pesto), and chives.

Sandwich toppings:
Pesto
Hemp seeds (can’t see them under the veggies!)
Sun sugar tomatoes
Sliced raw zucchini
Chives and Chopped Jalapeno
Baked Tofu
2 Blocks Super Firm Tofu (squeeze out excess water), cut into small squares
A little bit of Extra Virgin Olive Oil
Sage Salt (we get ours from our neighbor Shining Waters Farm)
Directions:
Preheat oven to 415 degrees F.
Toss the oil and sage salt with tofu until well coated.
Place tofu on a cookie sheet covered in silicone mat.
Bake for 15 minutes until edges slightly brown.
