Garden to Table Chickpea-Kale Salad

No one wants to stand over a hot stove during the summer. This popular recipe in the Adame-Gamel household is perpetually in a bowl in the refrigerator for a quick, delicious, nutrient-dense, cook-free meal!

This recipe is chockful of ingredients from our garden including the kale, zucchini, and fresh herbs.

The onions were locally grown from Harvest Moon in Rochester, IN.

Ingredients:

Approx 4 cups chopped kale

1 Medium zucchini, chopped

1 Small onion, chopped (can substitute green or purple onions)

Fresh garden herbs: basil, chives, rosemary, thyme, tarragon

Zest and juice of one lime or lemon

2 Cans chickpeas, drained and smashed (no or low added salt or ingredients)

Cumin (about 1/2 - 1 tablespoon)

Hot Sauce (we LOVE Shining Waters Farm brand, they are our neighbors!)

Glob of VEGAN/plant-based Mayo

Glob of your favorite mustard

Salt and pepper to taste

Directions

  1. Smash the chickpeas and place in a bowl.

  2. Add all other ingredients and mix well until creamy.

  3. Adjust cumin, salt, pepper, and hot sauce to taste.

Serving Suggestions

Dr. Adame loves a grilled homemade sourdough with chickpea-kale salad, more kale, tomato, and either avocado or hummus.

A simple sandwich with lettuce or spinach or kale.

In a wrap.

In a bowl with rice or quinoa, avocado, baked tofu, and raw veggies.

Serve with fruit.
