Tofu-Stuffed Vegan Enfrijoladas

Dr. Adame gets back to her Mexican roots with a vegan version of Enfrijoladas, a dish she learned from Shimo (her abuela). This is one of Tristan’s favorite dishes! Like many “peasant” Mexican dishes, the ingredients are simple and economical.

What are enfrijoladas? Enfrijoladas are a Mexican dish similar to enchiladas, but instead of the typical chili-based sauce, they use a flavorful sauce made from black or pinto beans. Traditionally, they can be filled with ingredients like cheese, eggs, meat, or vegetables, and are often topped with cheese, cream, and onions. These are a vegan version stuffed with extra firm tofu and topped with green salsa, avocado, and h/e/m/P seeds.

Make The Tofu

Squeeze out excess water of 1 or 2 blocks of extra firm or super firm tofu.

In a cast iron skillet, cook the tofu until crispy in a little extra virgin olive oil.

Add some onions and sautee until soft.

Add 8 oz of fresh salsa. Recipe in our blog or available in Brain Boosters. You can also get good quality sala at the Culver Farmer’s Market from some vendors.

Make The Bean Sauce

In a high speed blender, add two cans of unsalted or low salt black beans. Choose a brand that has no additives.

Add a pinch of salt, cumin seeds, smoked Paprika, several cloves of garlic, 1/4 cup nutritional yeast. Blend at high speed until smooth. Adjust spices to taste.

In a hot cast iron skillet, pour the bean sauce and cook until desired thickness.

To Assemble

Heat up corn tortillas in a skillet or cast iron griddle (comal) for a minute or two, stuff with the tofu-salsa mixture, fold and continue cook over the comal until nice and crispy.

Top with the bean sauce, h/e/m/p seeds, lime juice, and green or red salsa. You can also top with more of the tofu mixture.

Serve with fruit.
